Dry Mustard Rub for Beef Roast

I love mustard with roast beef and this is a great way to incorporate it with some other delicious flavours. I make up a batch of this rub and use a couple of teaspoons on a 1kg roast, or more on a larger one and store the rest in an airtight container for next time. The beauty of it is that you can add more or less as you like, so suit yourself! Its also great because its made with stuff you probably already have in your pantry.
Dry Mustard Rub
1/3 cup salt (use ground or fine)
3 tblspns dry mustard
4 tspns ground black pepper
1 tblspn dry garlic
1 tblespn mixed herbs (or use 1/2 dried thyme and 1/2 oregano)
2 tspns dry ground coriander
Mix together, rub on your roast with some olive oil. I like to also cook the roast on a bed of celery and onion, but its not necessary. Enjoy!
