Grandma's Meatballs

This is my grandmother's recipe (with some slight changes) and it always makes me think of her when we have this at home. I love recipes like this - so easy and delicious!


Ingredients

500g beef mince

1 finely chopped onion

1 egg

1 can of tomato soup (I like to use Heinz Big Red)

1/2 cup fresh breadcrumbs

1/2 cup of uncooked rice (if using brown rice partially cook before adding)

salt and pepper

I clove fresh garlic crushed

I teaspn of dried basil (or equivalent of fresh basil if you have it)

1 1/2 cups of cold water


Method:

Preheat the oven to 180 degree C. Mix all ingredients except soup and water and form them into balls about the size of a 50 c piece. Place them into a oven dish and gently pour tomato soup and water over the top (it needs to mostly cover the meatballs). Bake for 1 1/2 hours. You can turn the meatballs part of the way through if you think it necessary.


My kids love this dish and I like to serve it with salad, vegies or, for carb loading, spaghetti. Yum!



My grandma's meatballs were always a hit at family gatherings. Great with some pasta and grated cheese.
